Egg White Breakfast Cups are a clean and very healthy breakfast.
Ingredients
1 pint Egg Whites (carton)
5 slices of Honey Ham (97% fat free - in water)
2 vine ripened tomatoes
1 cup Spinach
1/4 cup Basil
Pepper and Minced Garlic
1. Dice tomatoes and Honey Ham. Roughly chop spinach and basil.
2. Lightly spray muffin tins with cooking spray. Fill each muffin tin halfway with egg whites. Place ham, basil, spinach, and tomatoes on top of egg whites and then add remaining egg whites to cover all ingredients. (Do not fill to very top; egg whites will expand slightly and spill over sides.)
3. Place in 350 oven for 30-35 minutes (or until egg whites are firm).
